Cannonau Le Anfore is a wine based on Cannonau grapes, grown on Tenuta Olianas, in Gergei, Sardinia, on clayey-sandy soils of calcareous and basaltic origin. The grapes harvested manually in boxes, with careful selection of the bunches, are de-stemmed and slightly crushed before being placed in underground terracotta amphorae, where spontaneous fermentation takes place with maceration of about 30 days. At the end of the malolactic fermentation the wine is decanted and placed again in amphora to refine for further 7-8 months. It has a ruby red color in the glass. The nose expresses with arrogance the typical notes of the Mediterranean scrub, above all myrtle and licorice. In the mouth it is complex and elegant and ends in a tannic and savory finish. It is excellent with roasted game, baked pork, and large aged cheeses.
