The grapes harvested manually in boxes, with careful selection of the bunches, are de-stemmed and slightly crushed before being placed in underground terracotta amphorae, where spontaneous fermentation takes place with maceration of about 30 days. At the end of the malolactic fermentation the wine is decanted and placed again in amphora to refine for further 7-8 months. It has a ruby red color in the glass.
